Color and effervescence
Straw yellow in color with abundant and fine bubbles.
A floral and fresh apple nose recalls the aromas of a spring walk in the orchard.
The bubbles invade the mouth with a good apple flavor and a hint of brioche bread.
This cider is dry with a touch of acidity which brings a lot of freshness.

The must which comes from a slight cryoconcentration is fermented at low temperature in stainless steel tanks for 3 to 4 months. Aging continues for 4 months with regular stirring of the lees. Then a tirage liqueur is added in the bottle. This is when fermentation on slats begins and after 9 months, the riddling of the bottles continues for several weeks. The last step is disgorging, which consists of opening the bottles to remove the lees, the result of fermentation in the bottle. At Cryo, we use our remarkable Cryo de Glace as shipping liquor. <
