During the first cold winter, usually in January, the apples which have had the courage to hang on to the branches are harvested at temperatures around –20 ° Celsius. The apple is picked by hand to be pressed and frozen. The fruits are in a way candied in the tree: the cold air and the wind "cook" the apples and evaporate the water from the fruits, which then take on an exquisite taste. This method (only about 5% of Quebec production) produces a very low yield. The harvested must is fermented at low temperature in stainless steel tanks for 5 months. Aging on lees for a minimum of 4 months in a French oak barrel adds the final touch to this unique product.
